3-day pescatarian meal plan for women in postmenopause
Three days of breakfast, lunch and dinner for women after the menopause who eat a pescatarian diet. Every recipe comes from Suggestic's recipe library, written in UK measures, with allergens listed for each one.
Day 1
Breakfast: Tomato-basil frittata
Serves 2. 30 minutes. Allergens: eggs, milk.
Use an ovenproof pan for the steps that go into the oven.
Ingredients
- 160g diced onion
- 6 eggs
- 240ml milk
- Salt, to taste
- Freshly ground black pepper, to taste
- 100g shredded mozzarella
- 180g sliced cherry tomatoes
- 15g basil leaves
- 1 garlic clove, minced
Method
- Preheat the oven to 190°C (170°C fan, gas mark 5).
- Add the eggs, milk, salt and pepper to a medium bowl, and beat until combined. Stir cheese into the egg mixture, and set aside.
- Spray a 25 cm non-stick frying pan with cooking pray, and preheat over medium low heat. Add the diced onions and garlic, and cook for 2 minutes. Place the tomato slices in the pan. Pour over the egg mixture.
- Use the spatula to loosen and pull the edges inward, allowing more liquid eggs to move to the hot pan. Repeat this several times. Remove the pan from the heat.
- Place the basil leaves on the top. Place the pan in the oven for about 10 minutes, until the centre is fully set. Remove the frying pan from the oven, and let it sit about 5 minutes to cool slightly.
- Serve immediately.
Optional supplement: Solgar Chelated Magnesium Tablets
Magnesium contributes to normal psychological function and to a reduction of tiredness and fatigue.
Food supplement, tablets. 100 mg magnesium per tablet; the label's daily dose of four tablets gives 400 mg (107% NRV). As a food supplement for adults, the label directs four tablets daily, preferably at mealtimes. Suitable for vegans and vegetarians. Magnesium can reduce the absorption of some antibiotics and oral bisphosphonates: ask your pharmacist how far apart to take your medicines and this supplement, as a two-hour gap is not enough for every medicine. Speak to your GP before taking magnesium if you have kidney disease. Magnesium supplements can cause diarrhoea. Do not exceed the recommended daily dose. Food supplements should not be used as a substitute for a varied and balanced diet and a healthy lifestyle. Keep out of the reach of young children.
