Ingredients

Method

  1. Season the chicken thigh with salt, pepper, dried thyme, allspice, and paprika.
  2. In a frying pan, heat oil over medium-high heat. Add the seasoned chicken thigh and brown on both sides, about 3-4 minutes per side. Remove the chicken from the frying pan and set aside.
  3. In the same frying pan, add chopped onion, pepper, and garlic. Cook until softened, about 3-4 minutes.
  4. Add grated ginger and chopped tomato to the frying pan. Cook for another 2-3 minutes until the tomato starts to break down.
  5. Return the chicken to the frying pan. Add soy sauce and water. Bring to a simmer.
  6. Cover the frying pan and let the chicken cook for about 20-25 minutes, or until cooked through and tender.
  7. Once the chicken is cooked, remove it from the frying pan and place it on a serving plate.
  8. Increase the heat to medium-high and let the sauce reduce for a few more minutes until thickened.
  9. Pour the sauce over the chicken, garnish with chopped fresh parsley.
